Black-Eyed Peas chill salad





Ingrediente:

1 avocado
zeama de la o jumatate de lamaie sau lime
o cana de fasole fiarta (fasole Black-Eyed Peas sau mung sau adzuki)
jumatate de legatura de menta
un praf de sare
putin ulei de masline

Se amesteca toate si se serveste rece

Ingredients:

1 avocado
juice from a half of lemon or lime
one cup of black eyed beans boiled (or mung beans or adzuki beans)
half of a mint bunch
a pinch of salt
a bit of olive oil

Mix all ingredients and serve cold.

Maimute de ciocolata Monti - Chocolate monkeys Monti







Ingrediente:

6 oua
30 ml de lapte de soia (sau lapte Monti)
30 ml de ulei
3 linguri de cacao
3 linguri de faina de soia
o lingura de sirop de agave
jumatate de lingurita de praf de copt

Galbenusurile se amesteca cu toate ingredintele de mai sus. Albusurile se bat spuma, pana stau bat. Dupa care se amesteca cu compozitia de mai sus, incet incet si se pune totul in formele de briose la cuptorul incins inainte. Se coc 20 min la 170 de grade. Dupa ce se racesc, se adauga glazura de ciocolata (ciocolata topita cu putin unt). Sunt foartee delicioase.

Ingredients:

6 eggs
30 ml of soya milk (or Monti milk)
30 ml of oil
3 sp of cocoa
3 sp of soy flour
one sp of agave syrup
half of tsp of baking powder

Mix the egg yolks with all ingredients. Mix the egg white until it's really hard. Mix all gently together. Put the composition in the muffin tray and put it into a pre heated oven. Bake for 20 minutes at 170 degrees. After they are cooled down, add chocolate glaze on top (chocolate melted with a bit of butter).

Cannoli Monti


Ingrediente:

100 gr de faina Monti (50 gr faina integrala, 50 gr tarate)
1 ou
1 lingura de ulei
un praf de sare

Umplutura:
150 gr de branza de vaci
o mana de caise uscate
o lingurita de fructoza
coaja rasa de la o lamaie

Se prepara un aluat din ingrediente si se pune la frigider pentru 30 de minute. Intre timp se face umplutura, amestecand toate ingredientele.
Dupa 30 de minute, se intinde coca foarte bine si se taie in patratele (in functie de ce forme aveti). Se ruleaza aluatul pe formele de cannoli si se baga la cuptor pentru 10 minute la 160 de grade. Cand s-au racit, se pune umplutura in cannoli cu ajutorul unei lingurite.

Ingredients:

100 gr of Monti flour (50 gr whole wheat flour, 50 gr bran)
one egg
one spoon of oil
one pinch of salt

Filling:
150 gr of white cheese (Philadelphia cheese type)
one hand of dried apricots
one tsp of fructose
lemon zest from one lemon

Make a dough from the ingredients and put it into the fridge to rest for 30 minutes. In the mean time, make the filling by mixing together all ingredients.
After 30 minutes make the dough thin and cut it into small pieces. Roll it on the cannoli moulds and put them in the oven for 10 minutes at 160 degrees. When they are cooled down, add the filling inside using a teaspoon.

Mazare cu somon la steamer - Steamed Baby peas with salmon



Ingrediente:

200 gr de mazare tanara
2 bucati de file de somon
1 lamaie

Se stropesc putin cu ulei de masline si sare si se pun in cosul de bambus, impreuna cu lamaia taiata in doua, pentru 15 minute. Inainte de servire se stoarce lamaia peste peste.

Ingredients:

200 gr of baby peas
2 pieces of salmon file
1 lemon

Cut the lemon into 2 pieces. Add all 3 ingredients into the bamboo steamer for 15 minutes. When serving squeeze the lemon on top of the salmon.

RULOURI VIETNAMEZE "SLIM" - Vietnamese slim rolls






Ingrediente:

250 de grame faina (jumatate faina integrala, jumatate tarate)
50 de grame orez salbatic
2 oua
1 lingura de sirop de agave
40 grame de drojdie
50 ml ulei
100 ml lapte (sau lapte de soia)

Umplutura

2 linguri sirop de agave
1 lingura seminte de susan
2 linguri de scortisoara

Laptele caldut se amesteca cu drojdia si siropul de agave. Orezul salbatic se macina in rasnita de cafea, pana devine pudra.
Toate ingredientele se amesteca foarte bine. Coca se pune intr-un bol acoperit sa stea cel putin o ora la crescut.
Intre timp se face umplutura. Se amesteca siropul de agave cu scortisoara si susanul si se lasa deoparte.
Dupa ce a crescut coca (1 ora) se intinde o foaie subtire (atat cat se poate), peste care se pune umplutura.
Se ruleaza cu ajutorul unei hartii de copt (cazul meu) sau folie de alimente, dupa care se taie cu un cutit, la distanta de 1,5 cm fiecare bucata. Se aseaza in tava rulourile si se mai lasa la crescut 30 minute.
Se coc in cuptorul incins in prealabil, la 160 grade aproximativ 40 minute.
Cand se scot din cuptor se mai dau deasupra cu putin sirop de agave.

Ingredients:

250 gr of monti flour (half whole wheat flour, half bran)
50 gr of wild rice
2 eggs
1 spoon of agave syrup
40 gr of yeast
50 ml of oil
100 ml of soya milk (or milk)

Filling:
2 sp of agave syrup
1 sp of sesame seeds
2 sp of cinnamon

Mix the warmed milk with the yeast and the agave syrup. Make the wild rice flour, using a coffee grinder. Mix all ingredients and let it rise for an hour.
In the mean time make the filling. Mix the agave syrup, the sesame seeds and the cinnamon and put it aside.
After an hour, put the dough onto a board and make it really thin. Add on top of the dough the filling. Roll it with the help of the oven paper and then cut into 1.5 cm pieces. Let them rise again for 30 minutes into the oven tray. Put them into the oven for 40 minutes at 160 degrees. When you take them out of the oven put some more agave syrup on top, while they are hot.

Tofu prajit cu legume la aburi - Fried tofu with steamed vegetables


Ingrediente:

50 gr de mazare boabe verde
50 gr de soia verde (edamame)
50 gr de mazare tanara

Tofu se taie in cubulete de 1 cm, se pune intr-o tava cu hartie de copt. Se presara sare si se pune putin ulei de masline peste tofu. Se baga la cuptor pentru 20 de minute la 170 de grade.
Legumele se pun in cosul de bambus pentru 10 minute.
Legumele se servesc cu tofu pus deasupra lor.

Ingredients:

50 gr of green peas
50 gr of edamame (green soy beans)
50 gr of baby peas

Cut the tofu into 1 cm squares and put it into a tray with baking paper. Sprinkle some salt and add some olive oil on it. Put it into the oven for 20 minutes at 170 degrees. Steam the vegetables into the bamboo steamer for about 10 minutes.
Serve the vegetables with the tofu on top.

Rulouri surf n turf - Surf n Turf rolls


Ingrediente:

jumatate de piept de pui
50 gr de somon afumat
ulei de susan

Pieptul de pui se taie in doua si se subtiaza bucatile (usor, cu ciocanul de snitele).
Pe toata suprafata puiului se aseaza felii de somon afumat si se ruleaza. Cele doua rulouri se pun la steamer pentru 10 minute, dupa care se prajesc intr-o tigaie incinsa cu o lingurita de ulei de susan. Se servesc cu salata.

Ingredients:

half of chicken breast
50 gr of smoked salmon
sesame oil

Cut the chicken breast in 2 pieces and make it thin, gently with the meat basher. Put the smoked salmon on top of the chicken and roll it. Put the two rolls into the steamer for 10 minutes. Then fry them into a hot pan with one teaspoon of sesame oil. Serve with salad.

Kurtos Monti


Ingrediente:

400 gr faina (200 gr tarate, 200 gr faina integrala)
50 gr faina de soia
2 oua
30 gr de drojdie
un praf de sare
80 gr de fructoza
nuci pisate
coaja de la o lamaie
sirop de agave sau sirop de yacon

Se face coca si se lasa la crescut o ora, dupa care se pune pe borcane. Se mai lasa 15 minute la crescut, iar inainte de a le baga in cuptor se dau cu pensula cu sirop de agave. Se lasa la cuptor 15 minute la 160 de grade. Dupa ce se scot din cuptor se mai dau iar cu sirop de agave si prin nuca, asa cum sunt, fierbinti.

Ingredients:

400 gr of flour (200 gr bran, 200 gr whole wheat flour)
50 gr of soya flour
2 eggs
30 gr of yeast
one pinch of salt
80 gr of fructose
smashed walnuts
one lemon zest
agave syrup or yacon syrup

Make the dough and let it rise for an hour, after one hour put it around the jars. Let it rise for 15 minutes more and before putting it into the oven, smear it with some agave syrup. Let it cook for 15 minutes at 160 degrees. When you take it out of the oven smear it again with agave syrup and smashed walnuts, while it's still hot.

Sparanghel cu tofu in suc de portocale - White asparagus with tofu in orange juice



Ingrediente:

100 gr de tofu
o portocala
150 gr de sparanghel alb
o lingurita de ulei de susan
o lingura de ulei de masline
o lingura de otet balsamic
o lingurita de miso alb

Se face un sos din coaja si zeama de la portocala, uleiul de masline, otetul balsamic, uleiul de susan si miso. Se amesteca toate foarte bine. Tofu se taie in cubulete de 2 cm lungime si se toarna sosul peste tofu si se lasa 15 minute la marinat. Tofu (scos din sosul de marinata, care se pastreaza separat deocamdata) se pune intr-o tava pe hartie de copt, pe un strat si se baga la cuptor pana se rumeneste tofu. Cand s-a rumenit tofu se adauga sparanghelul si se mai lasa 5 minute la cuptor. Se scoate totul din tava, se pune intr-o farfurie si se toarna peste sosul care a ramas de la marinata.

Ingredients:

100 gr of tofu
one orange
1 tsp sesame oil
1 sp of olive oil
1sp of balsamic vinegar
1 tsp white miso

Make a sauce from all the ingredients, including the orange zest and juice and mix them really well. Cut the tofu into 2cm cubes and let it marinate into the sauce for 15 minutes. Take out the tofu and put it into an oven tray filled with baking paper. Let it stay in the oven until it's golden, afterwards add the asparagus and let it cook for 5 minutes in the oven. Take it out and put it on a plate and pour the marinate sauce on it.

Mini vinete dulci - Sweet baby aubergines



Ingrediente:

4 vinete mici
150 gr de branza de vaci
o mana de caise uscate
o lingurita de scortisoara
o ciocolata de 100 gr de 70% cacao
2 linguri de ulei de masline

Vinetele se gatesc la aburi, aproximativ 15 minute. Intre timp, caisele uscate se taie foarte marunt si se amesteca cu branza si scortisoara. Se scot vinetele de la aburi si fiecare vanata se taie in doua. In fiecare jumatate de vanata se pune cam o lingura de branza si se aseaza apoi pe un platou. Ciocolata se topeste si se adauga cele 2 linguri de ulei de masline. Acest sos se toarna peste vinete. Se servesc la temperatura camerei.

Ingredients:

4 baby aubergines
150 gr of white cheese (Philadelphia cheese type)
one hand of dried apricots
one tsp of cinnamon
one 70% chocolate of 100 gr
2 sp of olive oil

Put the aubergines into the steamer for 15 minutes. In the mean time, cut the apricots into small pieces and mix them with the cheese and the cinnamon. Cut the aubergines into halves and add into each half a spoon of the cheese mix. Melt the chocolate and add the olive oil in it. Pour the sauce onto the aubergines. Serve at room temperature.

Ratatouille


Ingrediente:

un ardei gras
o vanata
un dovlecel
o ceapa mare
4-5 rosii
o legatura de bususioc
sare, piper si ulei de masline

Toate legumele se taie cubulete. Intr-o tigaie se pun 3 linguri de ulei de masline si se adauga legumele. Se calesc pe aragaz aproximativ 10 minute, dupa care se pun intr-un vas si se baga in cuptor pentru 45 de minute la 160-170 de grade. Cand este gata se adauga busuiocul tocat. Se adauga sare si piper dupa gust.

Ingredients:

one bell pepper
one eggplant
one zucchini
one big onion
4-5 tomatoes
one bunch of basil
salt, pepper and olive oil

Cut all vegetables into cubes. In a pan add 3 tbs of olive oil and throw the vegetables in. Let them cook for about 10 minutes. Put them into a bowl into the oven for 45 minutes at 160-170 degrees. When it's ready add the chopped basil and also salt and pepper after taste.

Salata de portocale - Orange salad



Ingrediente:

o portocala
o ceapa rosie
otet balsamic
sare
piper
cateva fire de coriandru
cateva fire de patrunjel
ulei de masline

Ceapa se taie julienne si se pune intr-un castron, peste care se adauga sare, piper si 2-3 linguri de otet balsamic, dupa care se lasa la marinat 15 minute. Intre timp se curata portocala si se scot segmente din fiecare felie. Ceapa se scoate din marinata si se stoarce foarte bine. Se amesteca cu segmentele de portocala, patrunjel, coriandru si ulei de masline. Deasupra se mai pune putin piper.

Ingredients:

one orange
one shallot
balsamic vinegar
salt
pepper
coriander, parsley
olive oil

Chop the onion julienne, put it into a bowl, add the salt, pepper, 2-3 sp of balsamic vinegar and let it marinate for 15 minutes. In the mean time, cut the orange into segments. Take out the onion from the marinade and drain it well. Mix it with the orange, parsley, coriander and the olive oil and add a bit of pepper.

Porc in crusta de susan - Pork in sesame crust




Ingrediente:

200 gr de carne de porc
un pumn de seminte de susan (alb si negru)
o lingurita de sare
jumatate de lingurita de cardamon pudra
un albus de ou

Intr-o tigaie se prajeste carnea, pe toate partile, ca sa se rumeneasca. Intr-o tava de cuptor se pune hartie de copt. Se scoate carnea din tigaie si se pune pe hartie in tava. Intr-un castron se amesteca susanul, cardamonul, sarea si albusul. Se inveleste bine carnea cu tot amestecul si se baga la cuptorul incins la 160 grade aproximativ o ora.

Ingredients:

200 gr of pork meat
a full hand of black and white sesame seeds
a tsp of salt
half of tsp of cardamom powder
one white egg

In a pan fry the meat, until it's slightly brown on all sides. In an oven tray put cooking paper. Place the meat in the tray. In a bowl mix the salt, sesame seeds, cardamom, salt and white egg. Put the mix over the meat and put it in the hot oven at 160 degrees for about an hour.

Sarmale Monti




Ingrediente:

400 grame de carne de vita tocata
30 grame de orez salbatic
varza murata (cam jumatate dintr-o varza)
o ceapa medie
sare
piper
suc de rosii
2 crengute de cimbru
smantana

Orezul se fierbe separat (aproximativ 1 h). Ceapa se taie marunt si se caleste putin, se adauga orezul fiert si scurs bine de apa. Dupa adaugarea orezului se opreste focul. Carnea se amesteca cu orezul si ceapa, deja calite, sare si piper (nu puneti foarte multa sare, pentru ca varza murata este destul de sarata). Se fac sarmalele, care se aseaza intr o oala sau cratita. Peste se pune sucul de rosii si crengutele de cimbru. Se fierb cam 30 de minute, apoi se pun in cuptor pana cand carnea este gata. Se incearca dupa 1h (verificati daca s-a fiert varza).
Se servesc cu smantana deasupra.

Ingredients:

400 gr of minced beef meat
30 gr of wild rice
sauerkraut (about half from one cabbage)
one medium onion
salt
pepper
tomato juice
2 branches of thyme
cream

Boil the wild rice separately (about 1h). Slice the onion into small pieces, simmer it a bit and add the rice (well drained off water). After adding the rice, take the pan of the cooker. Mix by hand the meat, rice, onion and add pepper and salt (not too much salt, because the sauerkraut is already salty). Make the sarmale (roll the composition into cabbage leaves). Put them into a pan and add the tomato juice and the thyme. Boil everything for about 30 minutes and then put the pan into the oven. After cooking for one hour in the oven, check to see if it's ready (check if the sauerkraut is well done).
Serve with cream on top.

Chiftelute cu iarba de lamaie - Lemon Grass meatballs



Ingrediente:

jumatate de piept de pui
un bat de iarba de lamaie
o bucata de 2 cm de ghimbir
sare
piper
faina de soia


Pieptul de pui se taie cubulete (de un 1 cm), iarba de lamaie se curata de primele foi si se taie in bucati de 1 cm si ghimbirul se curata de coaja. Toate ingredientele se pun in blender si se mixeaza pana se face ca o pasta. Din aceasta compozitie se formeaza chiftelutele, care se dau prin faina de soia si se prajesc. Datorita fainii de soia vor iesi foarte crocante la exterior.

Ingredients:

half of chicken breast
one stick of lemon grass
a piece of 2 cm of ginger
salt
pepper
soya flour

Cut the chicken into cubes of 1 cm, clean the lemon grass of the first leaves and cut it into 1 cm pieces and peel the ginger of its skin. Put everything into the blender and mix it until they are squashed properly. From this composition make the meatballs and roll them through the soya flour and fry them into a pan with oil. Because of the soya flour, they will become crunchy on the outside.

Galuste(i) cu prune Monti - Dumplings with plums




Ingrediente:

prune
2 cutii de naut (400 gr, fara zeama, ambele cutii)
100 gr de faina de soia
2 oua
nucsoara
scortisoara
fructoza
wasa


Nautul se incalzeste putin si se scurge de zeama. Se pune in blender cu faina, cele 2 oua, putina nucsoara rasa si jumatate de lingurita de scortisoara. Din coca rezultata se fac galustile cu mana, cu prunele inauntru.
Din compozitia asta mie mi-au iesit 7 galusti, dar cred ca ies si 8 sau 9.

Pesmetul monti: se rasnesc in rasnita de cafea felii de wasa (eu am pus 3 sferturi dintr un pachet), se adauga o lingurita de scortisoara, nucsoara rasa si o lingura rasa de fructoza.

Deoarece nautul si faina de soia au tendinta sa se sfarame (imprastie in oala), am invelit fiecare galusca in folie de aluminiu. Se pun la la fiert aproximativ 25 de minute, dupa care se scot si se dau prin pesmetul monti.

Ingredients:

plums
2 cans of chickpeas (200 grams each drained)
100 gr soya flour
2 eggs
nutmeg, cinnamon, fructose
wasa fiber

Heat the chickpeas a bit and drain all the liquid out. Put in the blender the chickpeas, soya flour, eggs, nutmeg and cinnamon (half tsp). From this dough make the dumplings with the plums inside. This composition is enough for about 8-9 dumplings.

Crumbs of bread monti: grind the wasa fiber (3 quarters of a pack) with fructose 1 sp, nutmeg and cinnamon 2 tsp.

Because of the soya flour and chickpeas, the dough is breaking easily, so you have to wrap each dumpling into aluminium foil. Put them into a pan with water to boil for about 25 minutes.
Serve them on a plate after they've been rolled through the crumbs of bread monti.

Supa de sparanghel alb - White asparagus soup




Ingrediente:

500 gr sparanghel alb
o ceapa medie
o jumatate de lingurita cu seminte de coriandru pisat
o lingurita de patrunjel tocat
1 litru de supa de legume
o jumatate de ligurita cu sare

Se curata sparanghelul cu un peeler. Se taie in bucati de 1 cm lungime. Se toaca si ceapa marunt si se pune impreuna cu sparanghelul la calit intr-o lingura de ulei de masline. Se adauga coriandrul, patrunjelul, sarea, iar dupa 2 minute se adauga supa si se lasa la fiert, pana cand se fierbe sparanghelul (se verifica dupa 15 minute). Cand s-au fiert toate, se mixeaza, se mai gusta de sare si se serveste calda.

Ingredients:

500 gr of white asparagus
one medium onion
half of teaspoon of smashed coriander seeds
one teaspoon of chopped parsley
1 litre of vegetable stock
half of teaspoon of salt

Clean the asparagus with a peeler. Cut it 1 cm thick. Chop finely the onion and put it with the asparagus to cook into a pan with one spoon of olive oil. Add the coriander, parsley and the salt and after 2 minutes add the stock. Let it boil until the asparagus is well cooked (check after 15 minutes). When all are well cooked, mix everything. Serve it hot.

Salata de vita Carpaccio - Beef Carpaccio salad




Ingrediente:

200 gr de carne de vita
o crenguta de rozmarin
o lingurita de seminte de coriandru
sare si piper
ulei
germeni de ridichi albi si rosii

Se toaca rozmarinul marunt si se presara toate condimentele pe tocator. Bucata de carne se trece prin toate condimentele si se stropeste cu putin ulei. Se pune pe gratar 1.5 minute pe fiecare parte. Se scoate si se lasa la odihnit cam 5 minute. Dupa care se taie in felii foarte subtiri.

Se aseaza pe o farfurie un strat de germeni, peste se pun feliile de carpaccio.
Se stropeste la sfarsit cu cateva picaturi de ulei de masline.

Ingredients:

200 grams of beef
one branch of rosemary
one teaspoon of coriander seeds
salt and pepper
white and red reddish sprouts

Chop the rosemary finely and put in onto a chopping board along with all the other ingredients. Roll over the meat into all ingredients and also put a few drops of oil on it. Put it on the grill and leave it for 1.5 minutes on each side. Let it rest for about 5 minutes. Slice it as thin as you can.

On a plate, add the sprouts and on top put the carpaccio.
Also add a few drops of olive oil on top.

Pui cu fistic - Chicken with pistachio





Ingrediente:

jumatate de piept de pui
5 felii de bacon
10-15 bucati de fistic

Se bate putin pieptul de pui ca sa se mai subtieze. Se presara fisticul si se ruleaza. Deasupra se ruleaza bacon ul. Se infasoara in folie de aluminiu si se baga la cuptor pentru 15 minute. Dupa 15 minute se scoate din cuptor, se inlatura folia de aluminiu si se mai lasa 7-10 minute la cuptor la 180 de grade.

Se serveste cu salata.

Ingredients:

half of chicken breast
5 slices of bacon
10-15 pistachio

Make the chicken breast thinner using the back side of a knife. Put the pistachio inside and roll it. Put the bacon and wrap it on the chicken. Put the roll into aluminium foil and let it cook in the oven. After 15 minutes, take out the aluminium foil. Put it back into the oven for 7-10 minutes at 180 degrees.

Serve as side dish with salad.

Pui cu bacon si garnitura din germeni de naut - chicken bacon and garnish with chickpeas sprouts





Ingrediente:

jumatate de piept de pui
3-4 felii de bacon
1 lingura de cascaval ras
2-3 frunze de busuioc

Se bate putin pieptul de pui ca sa se mai subtieze. Se adauga peste pieptul de pui cascavalul ras, busuiocul si feliile de bacon, una langa alta. Se pune in tigaie, fara ulei, cu baconul in jos pentru 2 minute, apoi se intoarce si se mai lasa 2 minute.

Garnitura:
germeni de naut (naut incoltit)
2 felii de bacon
putin busuioc

Se taie cubulete bacon-ul si se caleste putin. Apoi se adauga si nautul deja fiert. Se mai lasa pe foc 2 minute. La sfarsit se presara deasupra putin busuioc.

Ingredients:
half of chicken breast
3-4 slices of bacon
1 spoon of cheese finely shaved
2-3 of basil leaves

Make the chicken breast thinner using the back side of a knife. Put on the chicken the cheese, the basil and the bacon. Put it into a pan with no oil, with the bacon side down for 2 minutes, turn it and let it cook for 2 more minutes on the other side.

Garnish:
chickpeas sprouts
2 slices of bacon
a bit of basil

Cut into small pieces the bacon and put in the pan for a few minutes. Then add the boiled chickpeas sprouts and let it cook for 2 more minutes. At the end, add a bit of finely chopped basil.

Ravioli cu branza - Ravioli with cheese





Ingrediente:

- faina monti (jumatate faina integrala, jumatate tarate)
- un ou
- branza
- busuioc

Se face coca de ravioli din faina si ou si se pune la frigider pentru o jumatate de ora. Se face umplutura din branza si busuioc.
Se rasucesc in forma de ravioli si se pun la fiert.
Se rade putin cascaval (sau parmezan) deasupra, se poate adauga si smantana.

Ingredients:

- monti flour (50% whole wheat flour, 50% bran)
- one egg
- cheese
- basil

Make the dough from the flour and the egg and let it rest in the fridge for about half an hour. Make the filling from cheese and basil.
After filling the ravioli, twist them so they are in ravioli shape and then boil them.
You can add a bit of cheese (or parmesan if you have) on top and also some cream.
