Supa de sparanghel alb - White asparagus soup




Ingrediente:

500 gr sparanghel alb
o ceapa medie
o jumatate de lingurita cu seminte de coriandru pisat
o lingurita de patrunjel tocat
1 litru de supa de legume
o jumatate de ligurita cu sare

Se curata sparanghelul cu un peeler. Se taie in bucati de 1 cm lungime. Se toaca si ceapa marunt si se pune impreuna cu sparanghelul la calit intr-o lingura de ulei de masline. Se adauga coriandrul, patrunjelul, sarea, iar dupa 2 minute se adauga supa si se lasa la fiert, pana cand se fierbe sparanghelul (se verifica dupa 15 minute). Cand s-au fiert toate, se mixeaza, se mai gusta de sare si se serveste calda.

Ingredients:

500 gr of white asparagus
one medium onion
half of teaspoon of smashed coriander seeds
one teaspoon of chopped parsley
1 litre of vegetable stock
half of teaspoon of salt

Clean the asparagus with a peeler. Cut it 1 cm thick. Chop finely the onion and put it with the asparagus to cook into a pan with one spoon of olive oil. Add the coriander, parsley and the salt and after 2 minutes add the stock. Let it boil until the asparagus is well cooked (check after 15 minutes). When all are well cooked, mix everything. Serve it hot.

Salata de vita Carpaccio - Beef Carpaccio salad




Ingrediente:

200 gr de carne de vita
o crenguta de rozmarin
o lingurita de seminte de coriandru
sare si piper
ulei
germeni de ridichi albi si rosii

Se toaca rozmarinul marunt si se presara toate condimentele pe tocator. Bucata de carne se trece prin toate condimentele si se stropeste cu putin ulei. Se pune pe gratar 1.5 minute pe fiecare parte. Se scoate si se lasa la odihnit cam 5 minute. Dupa care se taie in felii foarte subtiri.

Se aseaza pe o farfurie un strat de germeni, peste se pun feliile de carpaccio.
Se stropeste la sfarsit cu cateva picaturi de ulei de masline.

Ingredients:

200 grams of beef
one branch of rosemary
one teaspoon of coriander seeds
salt and pepper
white and red reddish sprouts

Chop the rosemary finely and put in onto a chopping board along with all the other ingredients. Roll over the meat into all ingredients and also put a few drops of oil on it. Put it on the grill and leave it for 1.5 minutes on each side. Let it rest for about 5 minutes. Slice it as thin as you can.

On a plate, add the sprouts and on top put the carpaccio.
Also add a few drops of olive oil on top.

Pui cu fistic - Chicken with pistachio





Ingrediente:

jumatate de piept de pui
5 felii de bacon
10-15 bucati de fistic

Se bate putin pieptul de pui ca sa se mai subtieze. Se presara fisticul si se ruleaza. Deasupra se ruleaza bacon ul. Se infasoara in folie de aluminiu si se baga la cuptor pentru 15 minute. Dupa 15 minute se scoate din cuptor, se inlatura folia de aluminiu si se mai lasa 7-10 minute la cuptor la 180 de grade.

Se serveste cu salata.

Ingredients:

half of chicken breast
5 slices of bacon
10-15 pistachio

Make the chicken breast thinner using the back side of a knife. Put the pistachio inside and roll it. Put the bacon and wrap it on the chicken. Put the roll into aluminium foil and let it cook in the oven. After 15 minutes, take out the aluminium foil. Put it back into the oven for 7-10 minutes at 180 degrees.

Serve as side dish with salad.

Pui cu bacon si garnitura din germeni de naut - chicken bacon and garnish with chickpeas sprouts





Ingrediente:

jumatate de piept de pui
3-4 felii de bacon
1 lingura de cascaval ras
2-3 frunze de busuioc

Se bate putin pieptul de pui ca sa se mai subtieze. Se adauga peste pieptul de pui cascavalul ras, busuiocul si feliile de bacon, una langa alta. Se pune in tigaie, fara ulei, cu baconul in jos pentru 2 minute, apoi se intoarce si se mai lasa 2 minute.

Garnitura:
germeni de naut (naut incoltit)
2 felii de bacon
putin busuioc

Se taie cubulete bacon-ul si se caleste putin. Apoi se adauga si nautul deja fiert. Se mai lasa pe foc 2 minute. La sfarsit se presara deasupra putin busuioc.

Ingredients:
half of chicken breast
3-4 slices of bacon
1 spoon of cheese finely shaved
2-3 of basil leaves

Make the chicken breast thinner using the back side of a knife. Put on the chicken the cheese, the basil and the bacon. Put it into a pan with no oil, with the bacon side down for 2 minutes, turn it and let it cook for 2 more minutes on the other side.

Garnish:
chickpeas sprouts
2 slices of bacon
a bit of basil

Cut into small pieces the bacon and put in the pan for a few minutes. Then add the boiled chickpeas sprouts and let it cook for 2 more minutes. At the end, add a bit of finely chopped basil.

Ravioli cu branza - Ravioli with cheese





Ingrediente:

- faina monti (jumatate faina integrala, jumatate tarate)
- un ou
- branza
- busuioc

Se face coca de ravioli din faina si ou si se pune la frigider pentru o jumatate de ora. Se face umplutura din branza si busuioc.
Se rasucesc in forma de ravioli si se pun la fiert.
Se rade putin cascaval (sau parmezan) deasupra, se poate adauga si smantana.

Ingredients:

- monti flour (50% whole wheat flour, 50% bran)
- one egg
- cheese
- basil

Make the dough from the flour and the egg and let it rest in the fridge for about half an hour. Make the filling from cheese and basil.
After filling the ravioli, twist them so they are in ravioli shape and then boil them.
You can add a bit of cheese (or parmesan if you have) on top and also some cream.

Savarina Monti




Ingrediente:

200 gr faina Monti (100 gr faina integrala, 100 gr tarate)
20 gr drojdie
200 ml lapte monti (sau lapte de soia)
un ou
o lingura de fructoza
30 ml ulei
un praf de sare
coaja rasa de la o lamaie


Se amesteca toate ingredientele si se lasa 20 minute la crescut. Intre timp se ung formele cu unt si faina (eu am folosit faina de soia). Se pune compozitie in forme, cam jumatate si se mai lasa 15 minute la crescut. Se pun la cuptor la 160 grade, pentru aproximativ 20 minute.

Sirop:

3 linguri de fructoza
200 ml apa
esenta de rom si de vanilie

Se fierbe apa cu fructoza, dupa care se ia de pe foc si se adauga esentele.

Savarinele se lasa la racit o ora sau doua dupa care se insiropeaza si se orneaza cu frisca.

Ingredients:

200 grams of Monti flour (100 gr of whole wheat flour and 100 gr of bran)
20 gr of yeast
200 ml monti milk (or soya milk)
one egg
one spoon of fructose
30 ml of oil
one pinch of salt
skin from one lemon

Mix all ingredients and let it rise for about 20 minutes. In the mean time, smear the cookie forms with a bit of butter and flour (I used soya flour). Put the mix into the forms, half filled and let it rise again for another 15 minutes. Throw them into the oven heated at 160 degrees for 20 minutes.

Syrup

3 sp of fructose
200 ml of water
rum and vanilla essence

Boil the water with the fructose. Take it from the cooker and add the essences.

Leave the cookies to cool down for an hour or two. After they are cooled down, add the syrup and the whipped cream (I used soya whipped cream).

Inghetata de iaurt a la Doina - Yoghurt Icecream



Ingrediente:

500 ml de iaurt
200 ml de smantana lichida 35% (din care se face frisca)
4 linguri cu fructoza
esenta de cafea si de vanilie

Se bate frisca din smantana lichida, impreuna cu fructoza. Se amesteca bine iaurtul cu esentele. Se amesteca usor iaurtul cu frisca si se pune la congelator.

Ingredients:

500 ml of yoghurt
200 ml of whipped cream
4 spoons of fructose
coffee and vanilla essence

Whip the cream with the fructose. Mix very well the yoghurt with the essences. Mix gently the yoghurt with the whipped cream and put in into the freezer.

Spaghete de Quinoa - Quinoa spaghetti




Ingrediente:

spaghete de quinoa
busuioc
rosii
masline

Se face un sos din rosii si busuioc. Se fierbe sosul 3-5 minute si la sfarsit se adauga maslinele si pastele de quinoa fierte.

Ingredients:

quinoa spaghetti (pasta)
basil
tomatoes
olives

Make a sauce out of the tomatoes and basil. Boil it for about 3-5 minutes and at the end add the chopped olives and the boiled spaghetti.
